Chilli Chicken, Mushroom and Pesto Pizza

Nothing beats a Saturday night relaxing with a few drinks and a pizza especially when the pizza is home made and so fresh.

Noel enjoys simple plain and tasty pizzas whereas I tend to experiment a lot with flavours.  I first saw this recipe in one of our many cookbooks a long time ago and knew it would be cooked.  I had to adapt it a little as I am also a huge fan of mushrooms and bocconcini  on pizza and of course, omitted the olive oil from the chicken mixture as it simply does not need it.

The flavour kick was amazing.... chilli and garlic enveloped in freshly shredded chicken, vegetables and cheese with mouthfuls of basil pesto drizzled on the top.  What more could a girl ask for?  Maybe a bigger tummy.....  LOL!!


Chilli Chicken, Mushroom and Pesto Pizza
(recipe adapted from Women's Weekly Weeknights Fast and Fabulous Cookbook) 

Makes: 1 large pizza
Serves: 4

1 ball of Noel's pizza dough or a shop brought base
1 skinless chicken fillet
cooking spray
1/4 cup tomato paste
50 grams grated tasty cheese
1/4 teaspoon dried chilli flakes
1 clove garlic, crushed
1/2 brown onion, thinly sliced
100 grams button mushrooms, sliced
100 grams cherry tomatoes, sliced thickly
100 grams baby Bocconcini
1/4 cup basil pesto

Make dough as per recipe.

Place 2 cups water in a small saucepan and bring to boil over medium - high heat.  Add chicken, season with salt and pepper, and simmer on low heat for 10 minutes.  Drain and allow to cool.  Once cool, shred chicken into small pieces.

Preheat pizza oven to 280 degrees Celsius or oven to 240 degrees Celsius or 220 degrees Celsius fan-forced.

Spray pizza tray with cooking spray.

Roll out dough and place on pizza tray or place pizza base on tray.

Spread dough or pizza base with the tomato paste and sprinkle over the grated cheese.

Combined chicken, chilli flakes and garlic in a small bowl. Arrange chicken mixture, mushrooms, onions and tomatoes over pizza. Top with Bocconcini.

Bake pizzas for 10 minutes in pizza oven or 15 minutes in oven or until browned lightly and bases are crisp.

Drizzle pizza with with pesto and serve.

Pesto Prawn and Spinach Pizza

Back from another week of travelling and having to work Saturday morning (something I haven't done in a long time) I really needed something easy for dinner not to mention tasty. Living out of motel rooms was nice for the first month or so but I can tell you I am over it. Most are nice and have restaurants so I either don't have far to travel for dinner or I can get room service but I am sick of the vague descriptions on some menus or getting meals that don't resemble the description of the dish.

Anyhow as you may know by now we love having home made pizzas as it gives us all a chance to be experimental with flavours. This is one that I put together last night and surprisingly it was very yummy. This Pesto Prawn and Spinach Pizza had a very clean flavour.

From the first mouthful you tasted the bold basil pesto and then the delicateness of the prawns, amongst the fresh flavours of the spinach and tomato. I used minimal cheese as I thought it wouldn't need it and it didn't! Even Noel thought it was delicious.


Pesto Prawn and Spinach Pizza

Serves: 2

ProPoints per serve: 9

250 grams peeled raw king prawns
cooking spray
1 large Lebanese Pita Bread (100 grams)
2 tablespoons Basil Pesto
60 grams reduced fat grated tasty cheese
100 grams baby spinach
1/4 onion, sliced
1/2 red capsicum, sliced
6 cherry tomatoes, halved
salt
freshly ground black pepper


Preheat oven to 200 degrees Celsius.

Devein prawns, rinse and pat dry with paper towel.

Spray a pizza tray with cooking spray. Place Lebanese Pita Bread on tray.

Spread pita bread with pesto evenly. Sprinkle with half of the cheese.

Top with spinach leaves, onion and capsicum. Place prawns and tomato halves on pizza and season with salt and pepper. Sprinkle with remaining cheese.

Cook in oven for 15 to 20 minutes or until prawns are cooked through.

Pesto Linguine with Chicken and Zucchini

Tonight is a busy night for the house... Dennis and Pam arrive to visit tomorrow so with having weigh in as well as a mountain of cleaning to do we needed a very quick and easy dinner to prepare.

I know dinner at the Murray household is good when everyone is quiet for a few minutes as they take in the flavours. This dish was very fresh tasting and to be totally honest very enjoyable. Even Miss 9 who apparantly hates pesto had 2 bowls full.

As far as preparation and cooking is concerned, this pasta dish is on the table in under 25 minutes which as you all know fits my week night requirement of something quick and tasty. Considering the fact that there is the minimum of ingredients with this recipe you will, like we were, actually be surprised with the flavour.


Pesto Linguine with Chicken and Zucchini
(recipe adapted from Good Taste Magazine January 2009)

Serves: 6
Points per serve: 6

350g dried linguine pasta
Olive oil spray
1 (about 300g) single chicken breast fillet, thinly sliced
2 zucchini, trimmed, thinly sliced diagonally
2 garlic cloves, crushed
80g (1/3 cup) bought basil pesto
1/2 cup fresh basil leaves, coarsely torn
1/2 cup reduced fat light thickened cream
20g (1/4 cup) coarsely grated parmesan


Cook the pasta in a large saucepan of salted boiling water following packet directions or until al dente. Drain and return to the pan.

Meanwhile, heat a large non-stick frying pan over medium-high heat. Spray with olive oil spray to grease. Add the chicken and cook for 2 minutes each side or until cooked through. Transfer to a plate. Increase heat to high. Add the zucchini and garlic, and cook, stirring occasionally, for 2 minutes or until the zucchini is tender.

Add the chicken, zucchini mixture, pesto, basil and cream to the pasta and toss to combine. Divide among serving bowls and top with the parmesan to serve.

Pesto and Chilli Oysters ~ Oysters with Vodka Salsa

On a whim I purchased some oysters Saturday afternoon as a treat for Noel, who loves them, as he was working all day on Saturday. He had requested steak for dinner but for a starter I thought these would be a nice surprise for him.

He loves eating Oysters with Vietnamese Dressing and would have that every single time - I however like to try different styles of dressings/toppings as I am not such a huge fan and only tend to eat a few anyways.

With a mission to find some different dressings and reading through lots of recipes I ended up just making these two toppings up and to my surprise they were quite nice and enjoyed by us both.

The chilli oil I used is homemade (I will have to blog as I am about to make some new batches) but you can purchased chilli infused oil at some supermarkets and deli's.

Pesto and Chilli Oysters

Serves: 2
Points per serve: 3


6 natural oysters in shells
3 teaspoons basil pesto (premade)
3 teaspoons chilli oil
dried chilli flakes (if desired)

Remove oysters from shells, rinse and drain. Return to shells and place shells onto a patty pan tray.

Preheat grill to high.

Place 1/2 teapsoon of pesto on to each oyster. Drizzle with 1/2 teapsoon chilli oil and sprinkle with chilli flakes.

Place under grill and cook for 2 - 3 minutes or until oil is sizzling.

Remove from grill, allow to cool slightly and serve.

Oysters with Vodka Salsa

Serves: 2
Points per serve: 1.5


6 natural oysters in shells
1/2 tomato, finely diced
1 spring onion, finely sliced
1 tablespoon finely chopped fresh coriander leaves
2 teaspoons lime juice
1 tablespoons vodka
salt
freshly ground black pepper

Remove oysters from shells, rinse and drain. Return to shells.

In a bowl combine tomato, spring onion, coriander, lime juice and vodka. Season to taste with salt and freshly ground black pepper. Allow to stand for 1 hour for flavours to fuse.

Top each oyster with salsa mixture and serve.

Pesto Pasta

If you want a really quick pasta to make, this really fits the bill. Not to mention after all the rich Christmas Food something "plain Jane" is something someone wants.. I know I really needed this last night.

Really it's only a matter of boiling the pasta, making the pesto, mixing through the pesto and voila it's done. Pesto itself is rather easy to make and done in a matter of minutes. There was quite a few of us last night eating this comfort dish but you could quite easily half the recipe.

Traditionally linguine is used with pesto but you can serve it with any pasta. Pesto sauce can be made up to a week in advance and refrigerated in an airtight container. Ensure the pesto is tightly packed and seal the surface with some plastic wrap or pour some extra oil over the top to prevent the pesto from going black.


Pesto Pasta
(Recipe sourced from The Essential Pasta Cookbook)

Serves: 8
Points per serve: 7

500 grams pasta of your choice
3 tablespoons pine nuts
2 cups fresh basil leaves
2 cloves garlic, peeled
1/2 teaspoon salt
3 tablespoons freshly grated Parmesan
2 tablespoons freshly grated Pecorino Cheese, optional
1/2 cup olive oil
freshly ground black pepper

Bring a large saucepan of salted water to the boil and cook pasta as per the direction on the packet until al dente. Drain, return to the pan and keep warm.

About 5 minutes before the pasta is cooked, add the pine nuts to a heavy-based pan and stir over low heat for 2-3 minutes, or until golden. Allow to cool. Process the pine nuts, basil leaves, garlic, salt and cheeses in a food processor for 20 seconds or until finely chopped. Scrape down the sides of the bowl.

with the motor running, gradually add the oil in a tin steady stream until a past is formed. Add freshly ground black pepper to taste. Toss the sauce with the warm pasta until the pasta is well coated.

Veal Medallions and Baby Potatoes with Creamy Sun-dried Tomato Sauce

This dish sounds quite complex but is actually quite easy, in fact I had forgotten how easy it actually was!! Not to mention how flavoursome it is with the creamy sun-dried tomato sauce complimenting the veal.

Now the easy part to this dish starts with using sun-dried tomato pesto from a jar instead of fussing around with sun-dried tomatoes and processing them into a puree ... can it get any easier?

Yes it can, this recipe calls for tinned baby potatoes also!! I however didn't have the tinned variety so I used baby chat potatoes which I peeled and boiled to tender but do not overcook.


Veal Medallions and Baby Potatoes with Creamy Sun-dried Tomato Sauce

Serves: 4
Points per serve: 5.5

4 x 125g lean veal steaks
4 shallots, chopped
2 tablespoons sun-dried tomato pesto
1/4 cup dry white wine
1 teaspoon chicken stock powder
1/2 cup water
1 teaspoon dried thyme leaves
1 tablespoons fresh basil leaves, finely sliced
2 tablespoons light cream
2 x 410 g cans baby new potatoes, drained and halved or quartered

Coat a pan with cooking spray and heat. Cooke the veal until browned and tender. Do not overcook. Set aside.

To the same pan add the shallots, pesto, wine, stock, water and herbs. Bring to the boil, remove pan from heat and quickly stir in the cream.

Add the potatoes and return the veal to the pan. Reheat, without boiling, until potatoes and veal are heated through.
